Made from pure animal collagen, it is colorless, odorless and flavorless, so perfect for setting desserts like jellies, panna cottas, marshmallows, trifles, mousses, and soft candies. It can also be used to clarify house-made juices and vinegars. Offering clearer, smoother and more consistent results than powdered gelatin, 'silver' refers to the bloom strength – in this case 160 – which sits in the middle of the range in terms of firmness. Also available in Gold and Bronze strengths.
